Grilled Garlic-Sriracha Chicken

What you need:

  • 1/2 kg. chicken thigh fillets
  • 2 cloves garlic, grated
  • 2 tablespoons sriracha
  • 2 tablespoons sweet soy sauce (homemade or store-bought)
  • 2 tablespoons tomato paste

In a bowl, mix together grated garlic, sriracha, sweet soy sauce and tomato paste. Stir until ingredients are well-combined. Add the chicken fillets to the bowl and coat with sauce. Cover and refrigerate for at least 1 hour.

When ready, discard the remaining marinade and place chicken fillets on a grill pan. Cook on a pre-heated grill over medium-high heat until cooked through. Serve with your choice of rice or salad.

Yummy Seasoned Flank Steak

What you need:

  • 3/4 kg. flank steak
  • 3 cloves garlic, smashed and peeled
  • 2 tablespoons light brown sugar
  • 2 teaspoons sesame oil
  • 1/4 teaspoon ground black pepper
  • Optional
  • 1/2 cup soy sauce
  • 1/2 cup dry red wine

Combine garlic, light brown sugar, sesame oil and ground black pepper in a bowl. If using, add soy sauce and red wine. Mix thoroughly then pour the mixture in a large sealable bag (like Ziploc). Place the flank steak in the bag. Press out the air, seal and store in the refrigerator for a minimum of 24 hrs.

When ready, thaw the steak for 20 minutes before cooking on the grill. Cook on a pre-heated grill for 4-5 mins. per side or longer, depending on your desired doneness. Let the steak rest for 10 minutes before serving.

Grilled Soy Garlic Salmon

What you need:

  • 1 1/2 kg. side of salmon, sliced into 6 portions, skin on
  • 1/3 cup olive oil, plus more for the grill
  • 3 tablespoons soy sauce
  • 2 tablespoons Dijon mustard
  • 1 large clove garlic, minced

Brush a grill pan with olive oil and arrange salmon pieces on it. Mix together 1/3 cup olive oil, soy sauce, Dijon mustard and garlic in a bowl to make the marinade. Reserve 2 tablespoons of the mixture and spoon the rest over the salmon. Let it rest for 10-15 mins.

When ready, cook the salmon on a pre-heated grill over medium-high heat for 4 mins per side. Once cooked, remove skin, pour reserved marinade and serve.
